Here's a recipe I tried last night from Allrecipes -
Zucchini Potato Bake.
Potatoes, zucchini, red bell pepper, and I threw in some spinach too: 245 calories.
I also made some "lean pockets" from scratch...spinach and turkey pepperoni. I'll get to postin those soon.
It's so pretty...
Right out of the oven...

Actually for your first day back I would say that was a VERY good day.It takes awhile to get back into the swing of things.
Sure..I can diet..as long as I don't have to leave my "lab" lol My house is my safe haven..outside of that my will turns into jello and before I know it something bad for me has jumped into my mouth and partied all the way down to my thighs. SERIOUSLY! You are doing great,one step at a time.You were still under the high point of my calorie range.I am not sure what yours is but when I manage to do that ,staying under my high range,on a "bad day"..well then I feel pretty good!
Oh and the food looks so good! Something I could feed my hubby without raising the diet food alert and setting off his anti diet,must eat like a man instinct.
That veggie stuff was good! I can't wait to make it.
